For an8 year old working carefully at an average pace maybe an hour? I’d have them practice the stitches first on a scrap piece of felt and then do it with them.

Hi Alexis – of course you can! Felt is great for hand-sewing, for non-sewers or beginner sewers, for older kids. For fabric, you’d want to use a stiffer fabric (like denim) or stiffen/double/line your fabric. The process would simply be different.
